Nonna's Rosmary Peas


Let me share a simple but marvelous recipe to convert almost anyone who hates green peas. A case in point would be my husband who was traumatized during childhood with the prospect of eating green peas. My mom's recipe was the only therapy needed. Mom's "original peas" calls for "Ideal" brand canned peas. (I use frozen peas in this recipe) So here we go....



Ingredients:
1 can Ideal peas or equivalent (frozen)
1 tsp whole rosemary or 1 sprig fresh rosemary
1 small onion slice
salt and pepper to taste

Heat about 2 tablespoons of olive oil in a saucepan. Add the onions, rosemary and brown 'til golden. Add the peas and season with salt and pepper. Continue cooking to infuse the flavors.
Voila, great tasting savory peas to accompany your meal!

    I love this particular dish. It is so simple and yet so tasty and is the same dish that my mother-in-law used to make for me. Any pasta fagioli or rappini with garlic on your list?

    Rapini is one of my favorite vegetables.Can't get more Italian than that. It will be my pleasure to include a recipe at some point.

  3. I would never have thought of cooking peas this way. I have a huge rosemary bush in my yard and I'm always excited to find new ways to use it. I will try this for sure!

  4. Kath, I'm sure you won't be disappointed with my mom's original recipe. You just ask my husband who couldn't stand eating peas before trying my mom's, and now he is the first to go on about how great they taste.
